Gingerbread Protein Cookies
Organic Ingredients
- 1 cup almond flour
- ½ cup pea protein
- ½ c Omega3Nutraclease
- 1 tbsp Cheylon cinnamon
- 1 tbsp ground ginger
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1 tsp baking powder
- ½ tsp pink salt
- ½ cup Swerve Brown Sugar or regular brown sugar
- 1 cup almond butter (room temperature)
- 1 tsp vanilla extract
Method:
- In a medium bowl stir together all the ingredients.
- Form the dough into a ball and refrigerate for at least 30 minutes.
- Preheat the oven to 350 degrees F.
- Line a 2 cookie sheets with parchment paper.
- Place the ball of dough between two large pieces of parchment paper.
- Roll out to 1/4 in thickness.
- Use gingerbread mn cookie cutters to cut out cookie shapes and transfer them to the parchment paper.
- When you've cut out all the shapes you can, re-form the remaining dough into a ball, roll it out again, and repeat, until you've used up all the dough.
- Bake for 20 minutes until golden on the edges.
- Cool on the cookie sheet before handling or frosting. ENJOY!
