Halloween Chocolate Avocado Cupcakes

 

Organic Ingredients

 

For the Cupcakes

  • 1 cup avocado puree
  • 1/2 cupsugar free maple syrup
  • 2/3 cup unsweetened cacao powder
  • 2/3 cupOmega3NutraCleanse
  • 1 tbsp of pure vanilla extract
  • 1 tsp baking powder
  • 1 tsp pink salt

 

For the Frosting

  • 1 cup avocado puree
  • 1/2 cup erythritol or granular sugar free sweetener
  • 1/2 cup unsweetened cacao powder
  • 1/4 cupOmega3NutraCleanse
  • 1 tbsp of pure vanilla extract
  • 1 tsp pink salt
  • Optional: Sugar free sprinkles or candy of choice.

 

 

Instructions

  1. Preheat the oven to 350°F.
  2. Line the muffin pan with paper liners or have a silicone muffin pan on hand.
  3. For the cake batter, combine all ingredients in a small mixing bowl until smooth.
  4. Let it stand for 3-4 minutes as it thickens up.
  5. Divide the batter evenly filling each liner about 3/4 full.
  6. Bake for 30 minutes, or until firm to the touch.
  7. Remove from the oven and let cool in the pan for at least 20 minutes to allow the cupcakes to set. Remove from the pan and allow to cool completely before frosting.
  8. For the frosting combine all ingredients in a small mixing bowl until smooth.
  9. Frost each cupcake and sprinkle with sugar free sprinkles or candy of choice.
