Vegan Keto Tikka Masala Curry
Organic Ingredients:
- 2 tbsp MCT or coconut oil
- 1 can full fat coconut milk
- 1/2 cup tomato puree
- 1 package non-GMO extra firm tofu, drained and cubed
- 3 cups cauliflower rice previously frozen
- 1 sliced onion
- 2 cloves garlic
- 1-inch fresh grated ginger
- Pink salt and pepper to taste
- 1/3 cup Omega3NutraCleanse®
- 1 tbsp Garam Masala
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tbsp paprika
- 1 tsp turmeric
- 1 tsp cayenne pepper
Method:
- Heat oil in a pan on medium heat. Add in onion, garlic, ginger until onions are caramelized.
- Add in spice blend, tomato puree and coconut milk. Stir until completely combined.
- Add in cubed tofu and cauliflower rice.
- Cover the pan and simmer for about 25 minutes.
- Remove from heat and stir in Omega3NutraCleanse® and let it stand for 5 minutes as it thickens up and cools down.
- Serve with a fresh green salad and enjoy!
